Alright ladies....here ya go...the recipe you see us trying to do on the video LOL...but I actually think we did pretty good...as you'll see in part 2....tasty!!

*Get 1 pack of red peas (red kidney beans)
1 can of coconut milk
About 3 1/2 cups of rice
Put peas to soak overnight
Boil peas to boil with a couple stalks of thyme, a small onion and some Goya seasoning salt.
When peas is soft, add coconut milk, rice, couple cloves of garlic and a stalk of escallion. Few more shakes of seasoning salt just to make sure it has a nice taste.
If you like pepper (not too hot) you can add a whole scotch bonnet pepper at this point. Just be careful not to let the pepper burst. Take out as soon as it smells (by this point it should have the flavor).

* Instead of a pack of peas, get a big can of Goya Red Kidney Beans.
Put everything from the list above in the pot at the same time and just add water and cook until rice is cooked.t,

For variations you can add pigstail to the pot while the peas is boiling (make sure to boil the pigstail by itself at least once or it may be too salt).
Some people (myself included, depending on my mood) add a little sugar when not using the pigstail. Just be careful not to make it too sweet.

Oh! One more thing, be careful how much (or too little) water you put in the pot. After the peas are soft, try to gauge the water and coconut milk. I use a little trick where (this is obviously when I'm NOT doing rice and peas, but I've learned how to judge this way) I put the rice in the pot first, then I measure from the top of the rice to the second joint of my middle finger, that's where the water is supposed to be, (a little more if it's Parboiled Rice)
